Meal Kit Review – Chicken Sausage Pasta (Oh, My, Gosh!)

I’m sure you’ve heard of meal kits you can order and then cook at home. They’re nothing new, and some people use these services on a regular, weekly basis.

Sure. You don’t need this service. You can shop for ingredients yourself, find recipes online, and make your own meals. And sure, some of those meals could be a lot less expensive than using a meal kit service.

While we don’t use a meal kit service very often, the thing I personally like about them is that you find NEW recipes to use!

We just tried a meal kit service called EveryPlate. And OH. My. GOSH! Our first meal from the kit is now one of my favorite recipes!

This EveryPlate meal was a kit for four. We are a family of five. With three growing boys in their teens. I was really worried that this kit wouldn’t be enough food for our family, but we actually have leftovers! Yay! I’m already looking forward to tomorrow’s lunch – yum!

Our meal was around $2.66 per person (for a family of five – plus left-overs). That is pretty darn hard to beat!

This first meal from the kit was Chicken Sausage Pasta.

Holy cats! This is SO SO SO good!!!

The flavor is so rich, yet so lite. And all the ingredients are good for you!

I have to share this recipe with you – it is now one we will make again and again.

Chicken Sausage Pasta with Kale Pesto and Lemon

Ingredients:

  • 2 bunches of Kale
  • 2 Lemons
  • 2 heads of Garlic
  • 16 ounces of Penne Pasta
  • 1 cup Shredded Fresh Parmesan
  • 1 pound Chicken Sausage
  • 2 tablespoons Butter
  • 3 tablespoons Olive Oil

Directions:

  1. Bring a large pot of salted water to a boil
  2. Wash kale, then strip leaves from stems (discard stems)
  3. Zest 2 teaspoons lemon in a small bowl, then quarter the remaining lemon
  4. Peel and finely chop garlic
  5. When the water is boiling, add kale and cook until bright green (about 1-2 minutes)
  6. Leave the water boiling, but scoop kale out to a colander and rinse under cold water
  7. Dry the kale by wringing it dry in paper towels, then transfer kale to a cutting board
  8. Finely chop kale until it resembles a paste
  9. In a medium bowl, combine the chopped kale, parmesan cheese, half the lemon zest, 3 tablespoons olive oil, a pinch of chopped garlic, and a squeeze of lemon juice, then season with salt and pepper to taste
  10. In the pot of boiling water, add pasta and cook until al dente (about 9-11 minutes)
  11. Reserve 1/4 cup pasta water, then drain pasta
  12. In a skillet, heat a drizzle of olive oil over medium-high heat then add chicken sausage and cook – breaking up meat into pieces until browned and cooked through (around 5 minutes)
  13. Add remaining garlic to skillet of chicken sausage and cook until fragrant (about 30 seconds)
  14. Reduce heat to medium-low, then stir in pasta, kale pesto, 1 tablespoon butter, and a squeeze of lemon juice (if pasta is dry, gradually stir in reserved pasta cooking water)
  15. Season with more salt, pepper, or lemon juice
  16. Divide pasta into serving bowls, then sprinkle with remaining lemon zest
  17. Serve pasta with a lemon wedge on the side
  18. If you like things more spicy, sprinkle chili flakes on your pasta before serving
