Varadero Cooler Cocktail Recipe

Whip up a batch of Varadero Cooler Punch and sip it out of a pineapple.

This recipe makes 8-12 servings. Great for entertaining!

I’m making these this weekend to sip while I float in my new kiddie pool (long story).

Varadero Cooler

INGREDIENTS:

  • 1 750-ml bottle Rum (Barcardi Superior Rum or your favorite rum)
  • 1-1/2 cups Fresh Pineapple Juice
  • 1-1/2 cups Fresh Ruby Red Grapefruit Juice
  • 1/2 to 3/4 cup Sugar
  • 1 750-ml bottle Sparkling Rose, chilled
  • 4-6 Pineapples (optional, but fun)
  • Grapefruit Wedges for garnish

INSTRUCTIONS:

  1. Pour rum, pineapple juice, grapefruit juice, and sugar into a large pitcher or bowl and stir until sugar is dissolved.
  2. Chill until cold (at least 1 hour).
  3. Stir in rose.
  4. Taste and add more sugar, if desired.
  5. If using pineapples, cut off fronds (save for garnish), then cut off the top and bottom of the pineapple so it sits flush. Cut the pineapple in half, then scoop out the flesh (save for another use). Be careful not to pierce the skin of your ‘pineapple cups’.
  6. Laddle punch into ice-filled pineapple halves or into rocks glasses and garnish with a couple pineapple fronds and a grapefruit wedge.
